Refreshing Summer Cabbage and Jicama Salad

One of the easiest ways to eat healthy is by making food in bulk so that you can save time on side dishes. I usually prepare salads that I can pair with my dinner entree and then eat it again for lunch the next day. Cabbage and bean salads are great for this because they can last overnight without getting too soggy. Here is one of my favorite salads. The cilantro and lime are so refreshing and make this dish a nice summer side. Just combine the ingredients listed and enjoy!
