Healthy Apple Pie for Breakfast

Ok may it’s not apple pie, but it sure tastes like it! This recipe has steel cut oats and apples and is so delicious it tastes like warm apple pie. It is the recipe that changed my thoughts about oatmeal. I would never have considered eating oatmeal. The texture alone seemed unbearable. It was when we started going through one carton a week of eggs, that I knew we needed to start exploring other options. Now oatmeal is a a staple in our diet. 

  Steel cut oats is the healthiest option when it comes to oatmeal. It’s different than rolled oats in that it’s less processed.  Steel cut oats have more fiber, fewer calories, and greater nutritional value than rolled oats. They have a grainy texture and need to be cooked a little longer than rolled oats. I usually tend to my morning routine while it’s simmering. Once I'm finished I have a nice hot breakfast waiting for me. This breakfast is so filling and usually holds me over until lunch time. 

Steel cut oats with apples 

2 servings

Prep time: 5 minutes 

Cook time: 


1 apple peeled and sliced into 1 in pieces 

1 tablespoon of butter 

1/2 teaspoon of cinnamon 

1 cup steel cut oats 

3 cups water

2 tablespoons honey (add more for more sweetness)


1.  Add apples and butter to a medium sauce pan and cook over medium heat until apples are tender. 

2. Add water and bring to a boil

3.  Add oats, reduce heat to medium-low and simmer for 15-20 minutes, stirring often. 

4.  Remove from heat, add honey and salt.  

5.  Serve
